STEP 1: Prepare your dough
Place the pizza stone on a middle rack in your oven and pre-heat the oven to 450-500 degrees Fahrenheit. (Our first edition has instructions for a dollop of oil on the stone; this is a MISTAKE.  DO NOT USE OIL on your stone, just turn up the heat and you’ll ‘set’ your stone.)

To roll out your dough, dab flour on your fingers and hands and place one ball of dough onto a generously floured work surface (such as a large piece of parchment paper). Press the dough down with the tips of your fingers, working from the center out and flattening the dough with your palms. Be careful not to overwork the dough.

When the dough has doubled in width, use a floured rolling-pin to roll the dough out until it’s very thin. If there are any holes simply pinch the dough back together over the hole.

STEP 2: Prepare dough for garlic knots
You may find that you’ve rolled your dough out larger than your pizza stone. A great tip for that extra dough — make garlic knots! Remove the excess dough by taking your cutter all the way around the rolled out slab.
Then, cut your ring of extra dough into 2″-3″ strips and place aside for now.

STEP 3: Give your homemade pizza character
Begin topping your pizza with whatever your heart desires! Brush the dough with some olive oil or extra virgin olive oil. Then sprinkle on your toppings, sauce, cheese, and seasonings. STEP 4: Put your pizza peel to work
Load your pizza and parchment paper onto your floured pizza making peel and slide onto the pre-heated baking stone in the oven. Bake for 10-15 minutes until the cheese is bubbling and your crust is crispy and golden.

STEP 5: A touch of garlic
Now it’s time to prepare the garlic knots while your pizza is baking.

Fill a deep dish with enough olive oil to coat the bottom. Toss with minced garlic. Add other seasonings as desired, such as oregano, black pepper, rosemary, or “extra” garlic powder.

Then, stretch out your pizza dough strip and tie in a knot, as though you’re tying your shoes without going so far as tying a bow.

Now roll the knots around in the garlic and oil until lightly coated. After your pizza comes out of the oven, place the knots onto the pizza stone or a baking sheet and bake until cooked through and golden. Add seasonings and parmesan to taste.

STEP 6: That was easy
Take your pizza peel and slide under the pizza. You may need to grab hold of the parchment paper to help pull the pizza onto the paddle.

Be sure to move to a safe cutting surface to slice up your pizza as your pizza paddle may get damaged from knives and rolling cutters.
